Blackcurrant tart

I made a very delicious blackcurrant tart the other day, which was quick and easy to make.

  • Blackcurrants – 400 g
  • Flour – 230 g
  • Eggs – 2
  • Sugar – 150 g
  • Salt – 1/4 tsp
  • Milk (of room temperature) – 70 g
  • Vanilla extract – 1 tbsp
  • Butter (melted) – about 3 tbsp
  • Baking powder – 1 1/2 tsp
  • Icing sugar – to dust the tart (optional)
Method is explained and illustrated below. Enjoy!
Sift the flower into the bowl…

… add baking power…

… and salt…

… and mix together.

Melt the butter.

Add eggs into a separate bowl for whisking…

… and whisk until foamy.

Add sugar gradually, in a few portions…

… and whisk until light and fluffy.

Add vanilla extract…

… and melted butter…

… and milk…

… and whisk well to combine.
You should also start pre-heating your oven to 180C at this stage.

Add flour…

… and mix well with a spatula to combine.

Your dough should turn out like this.

 

Prepare your tray. Grease it with butter or oil…

… including the sides of the tray.

Place the dough into the tray…

… and place blackcurrants on top of the dough.
Bake at 180C for approx. 45 mins.

When your tart is ready, take it out of the oven…

… and run a sharp knife around the edges, to get the tart out of the tray.

If you wish, dust the tart with some icing sugar.

And enjoy! It’s very light, fruity and very delicious 🙂
