Courgette and potato pancakes

I made courgette and potato pancakes the other day, and they turned out delicious 🙂

  • Courgette – 1, medium size
  • Potato – 1, medium size
  • Eggs – 3
  • Salt – 1 tsp
  • Milk – 300 ml
  • Flour – 170 g
  • Vegetable oil – 1 tbsp, + about 1 tbsp for frying
  • Spring onion – to your taste (optional)
Method is explained and illustrated below. Enjoy!
Grate a courgette and a potato, and squeeze excess moisture out of it.
Place eggs into a bowl…
… add salt…
… and mix together to combine.
Add milk…
… and mix in.
Add flour…
… and vegetable oil…
… and mix together.
Add grated courgette and potato, and mix in.
Chop spring onions…
…add them to the mixture…
… and mix everything together.
Heat up the frying pan and fry a pancake about 2 to 3 minutes on middle heat.
Then flip the pancake over and fry for another 2 to 3 minutes.
And enjoy! 🙂
