I made courgette and potato pancakes the other day, and they turned out delicious 🙂
- Courgette – 1, medium size
- Potato – 1, medium size
- Eggs – 3
- Salt – 1 tsp
- Milk – 300 ml
- Flour – 170 g
- Vegetable oil – 1 tbsp, + about 1 tbsp for frying
- Spring onion – to your taste (optional)

Grate a courgette and a potato, and squeeze excess moisture out of it.
Place eggs into a bowl…
… add salt…
… and mix together to combine.
Add milk…
… and mix in.
Add flour…
… and vegetable oil…
… and mix together.
Add grated courgette and potato, and mix in.
…add them to the mixture…
… and mix everything together.
Heat up the frying pan and fry a pancake about 2 to 3 minutes on middle heat.
Then flip the pancake over and fry for another 2 to 3 minutes.
