I made these banana and honey mini muffins with berries, and they turned out absolutely delicious 🙂 They are also quick and easy to make, and are sugar-free.
- Bananas – 3 (medium size)
- Eggs – 2
- Full fat Greek yogurt – ½ cup (1 cup = approx. 250 ml)
- Honey – ⅓ cup
- Vanilla extract – 1 tsp
- Flour – 1½ cup
- Baking soda – 1/2 tsp
- Any berries you like. I used diced strawberries, raspberries and blueberries
Method is explained and illustrated below. Enjoy! 🙂
Place the bananas into a bowl and mash them into a fine paste.
Add the eggs…
… and whisk until well incorporated.
Add the Greek yogurt…
… and whisk it in.
Add honey…
… and vanilla extract…
… and whisk it in.
Sift in the flour, gradually, in several intervals…
… and whisk it in, until the last portion is fully incorporated.
You can also start pre-heating the oven to 175C at this stage.
Add the baking soda…
… and whisk it in just to combine.
Prepare the fillings. If necessary, dice or break the larger berries into smaller chunks.
Grease the muffin tray with butter or oil.
Place a small amount of batter evenly into each cup, filling the cups just for about a quarter of their volume.
Place a few chunks of berries into each cup.
If you have several kinds of berries and want each muffin to be filled with the same kind, you’ll have to memorise what kind of berries you put in each cup. If you don’t mind your muffins to be filled with a mixture of berries, you don’t have to memorise the fillings.
Now, cover the berries with more batter, filling each cup for about two thirds of its volume.
Place more berries on top of each cup.
Bake at 175C for about 20 minutes.
Once ready, take the muffins out of the oven and let them cool. Check readiness with a wooden cocktail stick – it should come out clean and dry.
And here they are! Pity you can’t smell them from the picture 🙂
