Chocolate chip sweet bread

I made chocolate chip sweet bread, which turned out delicious and quite simple to make – I highly recommend it.

For the bread:
  • Egg yolk – 1
  • Egg – 1
  • Honey – 2 tbsp
  • Olive oil – 1 tbsp
  • Strong bread flour – 275 g
  • Caster sugar – 3 tbsp
  • Dried yeast – 1 sachet of 7 g
  • Lukewarm water – 125 g
  • Egg white (to brush the bread with) – 1
  • Some chocolate chips (optional)
For the syrup (optional):
  • Water – 4 tbsp
  • Caster sugar – 75 g
For decoration (optional):
  • Mini chocolate eggs
  • Rainbow sprinkles

Separate 1 egg yolk from white, and place it and 1 egg into a small bowl.

Place honey into a separate bowl.

Add olive oil…

… and the egg mixture, and whisk it until foamy (you can use a hand whisk).

Sift the strong bread flour into a separate bowl.

Add caster sugar into the flour.

Add the yeast…

… mix it in, and make a well.

Add the egg mixture…

… and mix it in.

Start adding lukewarm water…

… gradually, bit by bit…

… and mix it well in.

Keep mixing with a wooden spoon, until the dough starts forming. If you find it too gooey, add a little more flour.

Sprinkle a wooden tray with the flour and place the dough on it. Knead for about 10-15 minutes until it stops sticking to your hands, but is still very soft.

Place the dough into an oiled bowl, cover with a cling film and leave to rise for about 1 hour in a warm and draft-free place.

In an hour, you will see the dough has risen.

Place the dough onto a wooden tray, sprinkled with some flour, divide it into 3 parts and form stripes.

Plait them…

… cover and leave to rise for another hour.

Pre-heat your oven to 170 C. Grease a tray and carefully place the dough into it. Brush the dough with an egg white. You can add some chocolate chips.

Bake at 170 C for 25-30 minutes.

Prepare some syrup: mix 4 tbsp water and 75 g caster sugar and simmer it. Brush it onto the bread. Sprinkle the bread with rainbow sprinkles and add chocolate mini-eggs.
