Homemade mini pizzas

I made mini-pizzas the other day, which were simple to make, the dough turned out fluffy and delicious, so everything was just perfect.

For the dough:
  • Warm milk – 150 g
  • Flour – 220 to 240 g
  • Sugar – 1 tsp
  • Salt – 1/3 tsp
  • Vegetable oil – 20 g
  • Dried yeast – 3 g
For the toppings:

Anything you like! 🙂

I used:

  • Sausage – 180 g
  • Tomato ketchup – approx. 6 tbsp
  • Mayonnaise – to your taste
  • Red onion – 1/2
  • Cheese – 100 to 120 g
Method is explained and illustrated below. Enjoy! 🙂
Make a sponge (although you can skip this step if your yeast is fast-action. Mine is, but I still prefer to make a sponge).
Take your milk (it MUST be warm – a bit warmer than room temperature, approx. 50 C), and add yeast…
… add sugar…
… and about 3 teaspoons of flour (out of the total amount), mix everything together and leave in a warm and dry place for about 10 to 15 minutes.
After 10-15 minutes, your yeast will start brewing, and your sponge will become foamy. Pour it into a bowl, add oil (it should be of room temperature)…
… add salt…
… stir it, and start adding the flour gradually, in small portions, mixing it in with a spatula.
Keep adding the flour and stirring…
… and when the dough starts firming up, dust your hands with a sprinkle of flour and continue kneading with your hands.
You may place the dough on the wooden board, dust it with flour and continue kneading.
When the dough is ready, it should be very soft, but stop sticking to your hands or the wooden board. You may not use all the flour (some of mine was left).

 

Dust the bowl with some flour, place the dough into it, cover it with a kitchen towel or cling film, and leave to rise in a warm and draft-free place for 40 to 60 minutes.

In the meantime, prepare your toppings.

In 40 to 60 minutes, your dough will approximately double in size.

Shape it into a longish roll, then divide it into 6 parts.

Roll each part into a small round piece and form a border with your fingers…

Once all the pieces are ready, start covering them with the toppings. You can also start pre-heating your oven to 180 C.
You may also want to place the pieces to the baking tray, covered with a parchment paper, at this stage, and not later, when they are covered with toppings and it’s much harder to move them. I left them on the wooden board and started covering them with toppings, and then realised I need to move them to the tray, and it was much more difficult to do.

Cover each piece with some ketchup…

.. then with onions…

… and tomatoes…

… and sausage…

… I added some mayonnaise… 
… and only then moved them to the tray and covered them with cheese.
Bake in a pre-heated oven at 180 C for about 20 to 22 minutes. Once baked, let them cool down a little – and enjoy! 🙂
