Semolina and cheese pudding

I made this semolina and cheese pudding, and it turned out amazing. It’s light, healthy (no flour, no butter), and not too sweet – hope you’ll enjoy.

  • Twarog cheese (I used half-fat) – 600 g
  • Eggs – 4
  • Raisins – 100 g
  • Semolina (I used fine) – 8 tbsp
  • Sugar – 70 g
  • Vanilla sugar – 10 g
  • Soured cream – 200 g
  • Salt – a sprinkle
  • Baking powder – 10 g
Method is explained and illustrated below. Enjoy!
Cover the raisins with warm water and leave them for about 15 minutes.
Put the semolina…
…into a main bowl.
Add the soured cream…
… mix together and and leave for about 15 minutes.
Put eggs into a separate bowl for whisking.
Add the vanilla sugar…
…plain sugar, and a sprinkle of salt…
… and whisk until light and fluffy.
Add the twarog cheese…
… into your main bowl with semolina….
… and whisk it until well combined and creamy. Be careful – twarog is heavy. Start on medium speed and then proceed on high speed.
Add baking powder…
…into your main bowl…
… and whisk it in.
You can also start pre-heating your oven to 180 C at this stage.
Now, gradually start adding the egg and sugar mixture…
… in small amounts…
… and gently fold it in with a spatula…
…until you’ve added all the egg mixture, and it’s well combined.
Dry the raisins up with paper towels…
… and add into the mixture.
And when the batter is ready…
… it’s very creamy and tender (those chunks are the raisins 🙂 )
Prepare your baking tray. I covered it with foil, and slightly greased it with butter. Pour your batter into it…
…and bake at 180 C about 40 to 45 minutes (if your oven is fan-assisted – 30 to 35 minutes). Once it’s ready, let it cool…
… and enjoy! 🙂 It’s very creamy and tender, and not sickly-sweet.
