It turned out absolutely amazing, Mum was delighted, and all the guests were raving. The sponge base was moist and silky, the apricot layer gave the cake a special tang, and the chocolate ganache glazing was a scrumptious finishing touch. It was a chocolate heaven &#8211; better than the professionally made Sacher Torte in Sacher Hotel in Vienna!<\/p>\n<div class=\"x11i5rnm xat24cr x1mh8g0r x1vvkbs xtlvy1s x126k92a\">\n<div dir=\"auto\"><strong>For the sponge base:<\/strong><\/div>\n<ul>\n<li dir=\"auto\">Dark cooking chocolate &#8211; 150 g<\/li>\n<li dir=\"auto\">Butter &#8211; 150 g<\/li>\n<li dir=\"auto\">Sugar &#8211; 120 to 150 g (I used 120 g)<\/li>\n<li dir=\"auto\">Vanilla sugar &#8211; 10 to 15 g<\/li>\n<li dir=\"auto\">Eggs &#8211; 6<\/li>\n<li dir=\"auto\">Flour &#8211; 150 g<\/li>\n<li dir=\"auto\">Baking powder &#8211; 1 tsp<\/li>\n<li dir=\"auto\">Salt &#8211; a sprinkle<\/li>\n<\/ul>\n<\/div>\n<div class=\"x11i5rnm xat24cr x1mh8g0r x1vvkbs xtlvy1s x126k92a\">\n<div dir=\"auto\"><strong>For moistening and apricot layer:<\/strong><\/div>\n<ul>\n<li dir=\"auto\">Apricot jam (smooth, with no chunks) &#8211; 250 g (you can use a bit more)<\/li>\n<\/ul>\n<p><strong>For the ganache glazing:<\/strong><\/p>\n<\/div>\n<div class=\"x11i5rnm xat24cr x1mh8g0r x1vvkbs xtlvy1s x126k92a\">\n<ul>\n<li dir=\"auto\">Dark cooking chocolate &#8211; 170 g<\/li>\n<li dir=\"auto\">Double cream &#8211; 170 g<\/li>\n<\/ul>\n<p>Method is explained and illustrated below. Enjoy!<\/p>\n<p>Separate yolks from whites. Be careful not to over-heat it, especially if you&#8217;re melting it in a microwave. Then add another egg yolk, and whisk again. Continue until you&#8217;ve added all the egg yolks, one by one.<br class=\"html-br\" \/>IMPORTANT: it&#8217;s crucial to whisk the egg and butter mixture very thoroughly. The stick should came out clean and dry.
