The traditional Baiser meringues are white or cream in colour, but I wanted to make a portion of the more colourful ones, and another portion of chocolate ones. They turned out absolutely delightful &#8211; crispy, smooth and delicate.<\/p>\n<p>For meringues:<\/p>\n<ul>\n<li>Egg whites &#8211; 100 g (of approx. 3 large eggs)<\/li>\n<li>Sugar &#8211; 200 g<\/li>\n<li>Lemon juice &#8211; 1 tsp<\/li>\n<li>Salt &#8211; 1\/4 tsp<\/li>\n<li>Food colourings &#8211; as many as you want (optional)<\/li>\n<li>Dark cooking chocolate &#8211; about 50 g<\/li>\n<\/ul>\n<p>For filling:<\/p>\n<ul>\n<li>Butter (soft, of room temperature) &#8211; 150 g<\/li>\n<li>Boiled condensed milk (or dulce de leche) &#8211; 240 g<\/li>\n<\/ul>\n<p>Method is explained and illustrated below.
