{"id":2435,"date":"2024-12-26T21:57:13","date_gmt":"2024-12-26T21:57:13","guid":{"rendered":"https:\/\/tashrecipes.com\/en\/?p=2435"},"modified":"2025-01-04T01:18:28","modified_gmt":"2025-01-04T01:18:28","slug":"fluffy-brioche-bread","status":"publish","type":"post","link":"https:\/\/tashrecipes.com\/en\/bread-rolls-and-buns\/fluffy-brioche-bread","title":{"rendered":"Fluffy brioche bread"},"content":{"rendered":"<p>I made some brioche bread the other day, and it is without a doubt the fluffiest and most delicious brioche ever \ud83d\ude42<\/p>\n<div class=\"x11i5rnm xat24cr x1mh8g0r x1vvkbs xtlvy1s x126k92a\">\n<div dir=\"auto\"><strong>For the sponge:<\/strong><\/div>\n<ul>\n<li dir=\"auto\">Flour &#8211; 128 g<\/li>\n<li dir=\"auto\">Dry yeast &#8211; 1 sachet of 7 g<\/li>\n<li dir=\"auto\">Lukewarm milk &#8211; 220 g<\/li>\n<\/ul>\n<\/div>\n<div class=\"x11i5rnm xat24cr x1mh8g0r x1vvkbs xtlvy1s x126k92a\">\n<div dir=\"auto\"><strong>For the dough:<\/strong><\/div>\n<ul>\n<li dir=\"auto\">Eggs (of room temperature) &#8211; 6 (plus 1 more for egg wash of the loafs)<\/li>\n<li dir=\"auto\">Flour &#8211; 384 g<\/li>\n<li dir=\"auto\">Sugar &#8211; 105 g<\/li>\n<li dir=\"auto\">Salt &#8211; 2 tsp<\/li>\n<li dir=\"auto\">Butter (softened) &#8211; 227 g (plus some more for greasing the baking trays)<\/li>\n<\/ul>\n<\/div>\n<div class=\"x11i5rnm xat24cr x1mh8g0r x1vvkbs xtlvy1s x126k92a\">\n<div dir=\"auto\">Method is explained and illustrated below. The kneading process isn&#8217;t easy, but well worth the effort! Enjoy! \ud83d\ude42<\/div>\n<\/div>\n<div dir=\"auto\"><\/div>\n<div dir=\"auto\"><\/div>\n<div dir=\"auto\">Start by making a sponge to develop a structure of the dough. You can see the structure has developed, and the sponge is grown. It also smells slightly acidic &#8211; a smell of the active yeast. When the dough is firmed up enough to curl up around the hooks like in a previous video, it&#8217;s time to start adding the butter. Your butter should be soft. Start adding it gradually &#8211; around 1 tablespoon or so at a time. I actively use the scraper to push the butter inside. The &#8220;windowpane test&#8221; is when the dough can be pulled quite thin before it starts tearing.
